The game has one kind of horse. Horses differ by coat, markings, traits, and individual potential. There is no breed catalog.

Each horse has strength, endurance, and confidence. Strength and endurance have a current value and a potential ceiling. Confidence thresholds of 33 and 80 appear in one guide, so I cite that guide instead of calling them official. Horses get hungry, thirsty, dirty, and tired. The care screen can groom, feed, treat wounds, and edit tack.

From here you can open the 14 traits, breeding, coats, buying, health, and age. The overview screenshot shows a table of strength, endurance, confidence, age, and training. That table is the in-game roster, not a breed index.
